Salt Harvest in Mozia by Trapani in Sicily
Until recently salt was considered a basic commodity.. salt was salt. In recent years, we've learned to appreciate and distinguish between distinct varieties of salts and how these salts improve flavours. Italian sea salt is produced from the low waters of the Mediterranean Sea along the coast of Sicily. The salt is produced by a salt mill called “moranella”or “chiusa” in the salt pans of Trapani, in Sicily. The mills were built in late 1800's and placed in part inside the natural reserve of Trapani protected by the WWF. It is a natural salt rich in iodine, fluorine, magnesium and potassium with a much lower percentage of sodium chloride than regular table salt. The salt pans are filled with sea water in the Spring and left to evaporate relying on the heat of the Sicilian Summer sun and the strong African winds.
